Basic information
Sodium tripolyphosphate is an inorganic substance with chemical formula na5p3o10. It is a kind of amorphous water-soluble linear polyphosphate. It is commonly used in food as water retention agent, quality improver, pH regulator and metal chelator.
Sodium tripolyphosphate has two crystalline states: type I (high temperature type) and type II (low temperature type). The difference lies in the difference of bond length and bond angle. They have the same chemical properties, but the thermal stability and hygroscopicity of type I are higher than that of type II.


Purpose:
Sodium tripolyphosphate has the functions of chelation, suspension, dispersion, gelling, emulsification and pH buffer. It can be used as main additives for synthetic detergent, industrial water softening agent, tanning pretanning agent, dyeing additives, organic synthesis catalyst, dispersant for pharmaceutical industry and food additives. In addition to exporting STPP, domestic STPP consumption is mainly concentrated in detergent industry, food, ceramics, etc.
Sodium tripolyphosphate is used for curing raw ham meat. Add 2.2kg of No. 3 mixed salt (refined salt 91.65%, granulated sugar 8%, sodium nitrite 0.35%) and 85g of sodium tripolyphosphate per 100kg of meat, stir well, and marinate in the cold storage at 0 ~ 4 ºC for 48 ~ 72h. The effect is good. It is used in the production of canned broad beans to soften the bean skin. Many fruits and vegetables have tough skin. With the maturity of fruits and vegetables, the skin becomes more and more tough. Adding polyphosphate in the water for blanching or soaking of fruits and vegetables can complex calcium, so as to reduce the toughness of the skin.
